So my review goes against many of what is written. I would agree that CIBO (Chee-bo) has a cool interior which is unpretentious and modern. I went with a friend and he graciously said you order what is gluten free on the menu. I knew going in that the management is currently looking for viable gluten free options for both pizza and pasta, but since the theme of the menu is to share, the items that are gluten free are few and far between.
We decided to start with the shrimp appetizer which sounded amazing. The menu description is shrimp, shaved fennel, summer melon, mint, pickled chilies. Our server warned us that there were only 2 shrimp on the dish but we decided to order anyhow. The flavor was great but definately was a dish that needs to be ordered with other appe’s.
For our main course we shared the halibut and beef striploin. The halibut had great flavor but was overcooked. The striploin was the highlight of the meal and I highly recommend it.
Overall, for celiac’s and gluten free’er’s, Cibo, is not a great option at this point, I believe once they get some great gluten free pizza and pasta options, I look forward to re-reviewing.
